Catering with Lo Salvaje at The Rackhouse
When choosing a caterer for your Rackhouse event, consider our wild-game food truck, Lo Salvaje. Spearheaded by chefs Stephanie Stackhouse and recent James Beard Award winner Jesse Griffiths, as well as the Spoke Hollow Ranch steward Josh Crumpton, Lo Salvaje aims to highlight the best of local ingredients.
Griffiths, who won a James Beard Award in 2022 for his cookbook “The Hog Book” on preparing wild game, and Stackhouse both hail from Austin butchery and farm-to-table restaurant Dai Due. At Lo Salvaje they are able to continue practicing the responsible use of wild game in cooking.
The Lo Salvaje menu is seasonal and features sustainably sourced local game - such as quail, boar, and antelope - in a variety of accessible dishes sure to wow your guests. Dishes are Mexican-inspired, such as the Duck Tinga Tacos (with wild boar chorizo, potato, and cotija cheese on corn tortillas), or the Watermelon Salad (with queso fresco, cucumber, mint, pickled onion, and a lime dressing), among others. These offerings pair best, of course, with our sotol-based cocktails, which our bar team is ready to assist with!
